About the farm
At the San Victorian farm, Hector Belalcazar is taking great care of his plants, which are more labour-intensive to grow than many other varieties of coffee.
For this reason, regular maintenance is needed between each row and each tree, making sure to remove weeds and create a free area for the plant to grow.
At this farm, weed covers are allowed to grow, in order to prevent soil erosion.
The coffee is fermented in their cherries for 20 hours, then depulped and fermented dry in cement tanks for an additional 24 hours. The coffee is washed four times before being placed in parabolic dryers for about 15 days.
