Camilo has created what we think could be the ultimate way to process coffee.

All the crisp tropical fruitiness of a washed process, with the intensity and vibrance of natural processing. Gold Wash is the name for the process that involves two stages of anaerobic fermentation, with the addition of “mossto” - the microbe rich juice from the pulped coffee. The drying process is completed over 18 days, in a dedicated greenhouse, under UV lights and fans.

The cherries are picked at their optimal sweetness of 25-26° Brix, then floated in water for sorting before the initial 48 hour fermentation. Pulping is done with just a small amount of water, to maximise the quantity of juice (mossto) collected from the cherries. This mossto is full of sugary goodness, organic matter and microbes which work to regulate metabolic activity within the beans, imparting flavour as enzymes break down sugars.

Finca Santuario has served as the testing grounds for what has now become The Santuario Project. Now established in Colombia, Costa Rica, Brazil and Mexico, The Santuario Project don’t only own and operate farms, but whole processing facilities -containing wet and dry mills, specialised drying areas, greenhouses, laboratories, and coffee gardens. 

The Santuario Project continues to emphasise the importance of biodiversity for long term sustainability of quality coffee; encouraging a wide range of plant and animal diversity throughout the farms, which work symbiotically with coffee plants.
